List crypto collection assets

The digital assets a customer can pay in with, grouped by symbol with the networks each is available on. Use a network’s asset_id as asset_id when initiating a crypto collection.

Each asset carries preferred — the few worth putting in front of a payer before a "see all". Pass ?preferred=true to fetch only those. Neither changes what we accept: every asset here is payable either way.
